Xanthan gum is a pale yellow to white flowing powder, slightly smell. Soluble in cold water, hot water, neutral solution, freezing and thawing, insoluble in ethanol. In the case of water dispersion, emulsification into a stable hydrophilic colloid.
In food field, xanthan gum is used as salt resistant thickener, high efficient suspension agent and emulsifier, high viscosity filling agent, it can improve the freeze stability and mouth-feeling of the products, meanwhile, it can extend the shelf life or products.
